Ingredients
  

  • 2 cups almond flour
  • 4 large eggs

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine almond flour, 2 eggs, salt, and garlic powder. Mix until a dough forms.
  3. Place the dough between two sheets of parchment paper and roll it out to 1/8 inch thick.
  4. Cut the rolled dough into rectangles to form the lasagna noodles.
  5. In a skillet, heat olive oil over medium heat. Add chopped spinach and cook until wilted, about 3-4 minutes.
  6. In a separate bowl, mix ricotta cheese, 1 egg, Italian seasoning, and half of the Parmesan cheese.
  7. In a baking dish, spread a layer of marinara sauce on the bottom.
  8. Layer the homemade noodles over the sauce, then spread half of the ricotta mixture on top followed by a layer of spinach and a sprinkle of mozzarella cheese.
  9. Repeat the layering process until all ingredients are used, finishing with marinara sauce and remaining mozzarella and Parmesan on top.
  10. Cover the baking dish with foil and bake for 25 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  11. Allow the lasagna to cool for a few minutes, then garnish with fresh basil before serving.

Notes

Storage & Reheating:
Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) until warmed through, or microwave individual portions until heated. You can also freeze the lasagna for up to 3 months; just thaw and reheat as needed.
