Equipment
Method
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine almond flour, 2 eggs, salt, and garlic powder. Mix until a dough forms.
- Place the dough between two sheets of parchment paper and roll it out to 1/8 inch thick.
- Cut the rolled dough into rectangles to form the lasagna noodles.
- In a skillet, heat olive oil over medium heat. Add chopped spinach and cook until wilted, about 3-4 minutes.
- In a separate bowl, mix ricotta cheese, 1 egg, Italian seasoning, and half of the Parmesan cheese.
- In a baking dish, spread a layer of marinara sauce on the bottom.
- Layer the homemade noodles over the sauce, then spread half of the ricotta mixture on top followed by a layer of spinach and a sprinkle of mozzarella cheese.
- Repeat the layering process until all ingredients are used, finishing with marinara sauce and remaining mozzarella and Parmesan on top.
- Cover the baking dish with foil and bake for 25 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
- Allow the lasagna to cool for a few minutes, then garnish with fresh basil before serving.
Notes
Storage & Reheating:
Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) until warmed through, or microwave individual portions until heated. You can also freeze the lasagna for up to 3 months; just thaw and reheat as needed. Variations:
- Add cooked ground chicken or beef for extra protein.
- Incorporate different vegetables like zucchini or mushrooms for a variety of flavors.
- Substitute ricotta with cottage cheese for a different texture.
- Use a tomato-based sauce with added spices for a spicier kick.
