Ingredients

Method
 

  1. In a mixing bowl, combine the shredded cooked chicken, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
  2. In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add half of the cheddar and mozzarella cheese to form a cheese shell.
  3. Cook for about 1-2 minutes until the cheese is melted and begins to turn golden brown.
  4. Carefully flip the cheese shell over using a spatula and cook for another minute to ensure it crisps evenly.
  5. Once done, remove the cheese shell from the skillet and place it on a cutting board.
  6. Add half of the chicken mixture to one side of the cheese shell, sprinkle with additional cheese, and fold the other half over to create a quesadilla.
  7. Return the quesadilla to the skillet, adding another tablespoon of olive oil if needed. Cook for 2-3 minutes on each side until golden brown and the cheese has melted inside.
  8. Repeat steps 2-7 for the second quesadilla.
  9. Once both quesadillas are ready, slice them into wedges.
  10. Garnish with chopped fresh cilantro, if desired, and serve with sour cream and salsa on the side.

Notes

Storage & Reheating:
To store, place any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm them in a skillet over medium heat until heated through, or microwave for about 30-60 seconds until hot.
