Ingredients
  

  • 2 cups fresh spinach chopped
  • 1 cup mozzarella cheese shredded
  • 1/2 cup feta cheese crumbled
  • 1/2 medium red onion thinly sliced
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the chopped spinach and sliced red onion to the skillet. Sauté for 3-4 minutes, or until the spinach is wilted and the onions are translucent.
  3. Remove the skillet from heat. In a mixing bowl, combine the sautéed spinach and onions with the mozzarella cheese, feta cheese, garlic powder, salt, black pepper, and red pepper flakes (if using). Mix well.
  4. Wipe the skillet clean and return it to medium heat. Add the remaining tablespoon of olive oil.
  5. Place one flour tortilla in the skillet. Spread a quarter of the cheese and spinach mixture evenly over half of the tortilla.
  6. Fold the tortilla in half and cook for 2-3 minutes on one side, until golden brown and crispy.
  7. Carefully flip the quesadilla and cook for an additional 2-3 minutes on the other side. Repeat with the remaining tortillas and filling.
  8. Once cooked, transfer the quesadillas to a serving plate. Cut each quesadilla into wedges and garnish with fresh parsley if desired.

Notes

Storage & Reheating:
Store any leftover quesadillas in an airtight container in the refrigerator for up to 3 days. To reheat, place on a skillet over medium heat until warmed through or in the microwave for 30-60 seconds.
