Method
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the chopped spinach and sliced red onion to the skillet. Sauté for 3-4 minutes, or until the spinach is wilted and the onions are translucent.

- Carefully flip the quesadilla and cook for an additional 2-3 minutes on the other side. Repeat with the remaining tortillas and filling.
- Once cooked, transfer the quesadillas to a serving plate. Cut each quesadilla into wedges and garnish with fresh parsley if desired.
