Method
 

  1. In a mixing bowl, combine the softened cream cheese and almond butter. Mix until smooth and creamy using an electric mixer or whisk.
  2. Add the powdered erythritol and vanilla extract to the mixture, continuing to blend until fully incorporated.
  3. Gently fold in the chopped strawberries and lemon juice, being careful not to overmix to keep some strawberry chunks.
  4. Drizzle in the melted coconut oil and stir until evenly mixed throughout the batter.
  5. Spoon the mixture into silicone molds or a mini muffin tin, filling each compartment evenly.
  6. Place the molds in the freezer for about 1-2 hours, or until the fat bombs are fully set and firm.
  7. Once set, remove the fat bombs from the molds and store them in an airtight container in the freezer.
