  • 1 cup shredded cheddar cheese

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the cabbage into 1-inch thick slices to create rounds and place them on the prepared baking sheet.
  3. Drizzle olive oil over the cabbage rounds and sprinkle with salt and pepper. Roast in the oven for 25 minutes, flipping halfway through.
  4. While the cabbage is roasting, prepare the beef patties. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.
  5. Form the beef mixture into 4 equally sized patties.
  6. Heat a skillet over medium heat and add a little olive oil. Cook the beef patties for about 4-5 minutes on each side, or until they reach your desired doneness.
  7. Once the cabbage is tender and slightly crispy, remove it from the oven. Place a beef patty on top of each cabbage round.
  8. Sprinkle shredded cheddar cheese on top of the patties and return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

Storage & Reheating:
Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in the oven at 350°F (175°C) for 10-15 minutes or until heated through. You can also microwave individual servings for 1-2 minutes until warm.
