Method
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the cabbage into 1-inch thick slices to create rounds and place them on the prepared baking sheet.
- Drizzle olive oil over the cabbage rounds and sprinkle with salt and pepper. Roast in the oven for 25 minutes, flipping halfway through.
- While the cabbage is roasting, prepare the beef patties. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.
- Form the beef mixture into 4 equally sized patties.
- Heat a skillet over medium heat and add a little olive oil. Cook the beef patties for about 4-5 minutes on each side, or until they reach your desired doneness.
- Once the cabbage is tender and slightly crispy, remove it from the oven. Place a beef patty on top of each cabbage round.
- Sprinkle shredded cheddar cheese on top of the patties and return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving. Garnish with fresh parsley if desired.
