Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, almond flour, chopped onion, minced garlic, eggs, Parmesan cheese, Worcestershire sauce, oregano, salt, black pepper, and smoked paprika. Mix well until all ingredients are fully incorporated.
  3. Transfer the meat mixture into a loaf pan and shape it into a loaf, smoothing the top and sides.
  4. In a small bowl, mix together the sugar-free ketchup and apple cider vinegar to create the glaze. Spread half of this mixture over the top of the meatloaf.
  5. Place the loaf pan on a baking sheet to catch any drips and bake in the preheated oven for 45-50 minutes or until the internal temperature reaches 160°F (70°C).
  6. Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes. After resting, drizzle the remaining glaze over the top before slicing and serving.

Storage & Reheating:
Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, simply slice the meatloaf and warm in the microwave for 1-2 minutes or until heated through. You can also reheat in the oven at 350°F (175°C) for about 10-15 minutes.
