Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the ground beef with garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Mix until all the spices are evenly distributed.
  3. Heat olive oil in a skillet over medium heat. Add the seasoned ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Once the beef is cooked, remove it from the heat and stir in half of the shredded cheese until melted and well combined.
  5. Take a large lettuce leaf and spoon a portion of the beef mixture onto the leaf. Tightly roll it up, like a burrito, and place it seam-side down on the prepared baking sheet.
  6. Repeat this process with the remaining beef mixture and lettuce leaves.
  7. Once all taquitos are rolled, sprinkle the remaining cheese on top and bake in the preheated oven for 10-12 minutes, or until the cheese is bubbly and slightly golden.
  8. Remove from oven and let cool for a minute. Serve with fresh cilantro and optional sour cream or guacamole.

Notes

Storage & Reheating:
Store any leftover taquitos in an airtight container in the refrigerator for up to 3 days. To reheat, place them in an oven at 350°F (175°C) for about 10 minutes or until heated through. Alternatively, you can use a microwave, though the texture may be less crispy.
