Equipment

  • 1 Large pot or Dutch oven
  • 1 Wooden spoon
  • 1 Measuring cups
  • 1 Measuring spoons
  • 1 Knife
  • 1 Cutting board
  • 1 Ladle

Method

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the cubed chicken breasts to the pot, season with salt and pepper, and cook until the chicken is browned on all sides, approximately 5-7 minutes.
  4. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
  5. Remove the lid and stir in the softened cream cheese, mixing well until fully incorporated.
  6. Pour in the heavy cream, followed by the chopped spinach, dried thyme, and oregano. Stir to combine and cook for an additional 5 minutes or until the spinach is wilted.
  7. Taste and adjust seasoning as necessary, adding more salt and pepper if desired.
  8. Ladle the soup into bowls, garnish with fresh parsley, and serve hot.

Notes

Storage & Reheating:
Store any leftover soup in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm on the stove over medium heat, stirring occasionally, until heated through. You can also microwave in 30-second intervals, stirring between, until hot.
Variations:
- For a spicier kick, add a pinch of red pepper flakes or diced jalapeños.
- Substitute the chicken with cooked shredded beef for a different protein option.
- Add in chopped cauliflower or zucchini for added vegetables and nutrition.
- Experiment with different herbs like basil or rosemary to change the flavor profile.
