Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, season the chicken breasts with salt, pepper, dried thyme, and paprika. Set aside.
  3. In a skillet over medium heat, add olive oil and butter. Once melted, add the sliced mushrooms and sauté for about 5-7 minutes until they are golden brown.
  4. Add the minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.
  5. Reduce the heat to low and pour in the heavy cream, stirring until well combined with the mushrooms and garlic.
  6. Add half of the mozzarella cheese to the skillet and stir until melted and smooth.
  7. Place the seasoned chicken breasts in a casserole dish and pour the creamy garlic mushroom sauce over the top, ensuring the chicken is fully covered.
  8. Sprinkle the remaining mozzarella cheese and grated Parmesan cheese over the top of the casserole.
  9. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  10. Once done, remove the casserole from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley if desired.
